Chocolate Raspberry Pie Recipe!

Mother’s day is just around the corner! When thinking about what to write about before Mothers day I thought a new pie recipe could be a fun idea! Maybe you as a reader want to make up this delicious pie for your Mom and treat her to something sweet, or perhaps you are the Mom who is still in charge of making dinner and dessert despite the fact that it is Mothers day. Well, no matter what circumstance you find yourself in, this pie is worth trying weather you make it yourself or share it with someone you care about. Chocolate Raspberry Pie

This pie only takes about 30 minutes to prepare.

Here is what you will need-

Ingredients:

Dough for a single pie crust

3 tablespoons sugar

1 tablespoon cornstarch

2 cups fresh or frozen unsweetened raspberries, thawed

For the Filling:

1 package (8oz) cream cheese, softened

1/3 cup sugar

1/2 teaspoon vanilla extract

1/2 cup heavy whipping cream, whipped

For the Topping:

2 oz semi-sweet chocolate

3 tablespoons butter

Directions:

1.) Once you have gathered all your ingredients, preheat the oven to 450 degrees. On a lightly floured surface, roll your pie dough into and 1/8 inch thick circle and transfer into a 9 inch pie plate. Trim around the pie plate so there is just a 1/2 of extra dough beyond the rim. Proceed to flute the edge, then refrigerate the dough for 30 minutes.

2.) Once the 30 minutes is up, bake your crust on the lower oven rack until golden brown. Let it cool on a wire rack.

3.) While your crust is cooling, combine sugar and cornstarch into a large saucepan. Stir in raspberries, and bring to a boil over medium heat. Boil and stir for 2 minutes. Then remove it from the heat, and allow it to cool off for about 15 minutes. Once it is cooled off, spread it into the crust and refrigerate.

4.) In a large bowl, beat together the cream cheese, sugar and vanilla until fluffy. Then, fold in the whipped cream. Carefully spread this mixture over the raspberry layer. Cover and refrigerate for at least one hour.

5.) In a microwave, melt chocolate and butter, and stir it until smooth. Let that cool for 3-5 minutes before pouring it over the filling. Cover and refrigerate for at least 2 hours, and continue to store it in the refrigerator if you have leftovers.

Finally, enjoy it! Specifically if you are a mother, even if you made this dessert yourself, its time to sit back and enjoy this sweet pie! You deserve it! Once you have tried it yourself you may not want to share, but nonetheless I encourage you to tell all your mom friends to give it a try themselves. Raspberry and chocolate, truly a heavenly combination! Also, if you don’t have ingredients for a dough crust, try this recipe out with a graham cracker crust, or chocolate crumb crust!
